Fried Peanut Butter and Banana Sandwich

What would an Elvis recipe section be without a peanut butter and banana sandwich?  He called them "peanut butter and nanner" sandwiches.  I've had this sandwich twice in my life and I can definitely see why Elvis loved it.  Here's how to make it:

Ingredients:


    1      small  ripe banana
    2      slices  of white bread
    3      tablespoons  smooth peanut butter
    2      tablespoons   butter


Preparation:


In a bowl, mash the banana with the back of a spoon.  Toast the bread lightly.  Spread the mashed banana on one slice of the toast and the peanut butter on the other.  Fry the sandwich in melted butter until each side is golden brown.  Cut and serve hot. 

This is for a serving of one.  Elvis could eat 12 - 15 sandwiches in a sitting. 


Potato Cheese Soup

Elvis liked this soup because it had a "stick-to-your-ribs"  flavor.  Here's how to make it:

Ingredients:

2 tablespoons butter
1/3 cup onion, chopped finely
1/3 cup celery, chopped finely

2 cups milk
4 cups Russet potatoes, pared into 1/2-inch cubes
3 cups chicken broth

Dash paprika
1 1/2 teaspoons salt
1/4 teaspoon pepper
2 cups sharp Cheddar cheese, shredded
French fried onion rings or croutons (optional)


Preparation:

Melt the butter in a big saucepan. Add onion and celery; cook over medium heat, stirring frequently, until tender. Add chicken broth and potatoes; simmer until potatoes are tender, about 10 minutes.

Pour mixture into blender and blend until smooth. Return to saucepan. Stir in seasonings and milk. Heat thoroughly.  Add cheese
, stirring until melted.


Banana Pudding

Mary Jenkins, who had cooked for Elvis for many years, said that he enjoyed banana pudding.  Here's how to make it:

Ingredients: 

2 1/2 cups cold milk

1 large pkg instant vanilla pudding, (6 ounces)

1 container whipped topping, (16 ounces)

1 can sweetened condensed milk, (14 ounces)

vanilla wafer cookies

sliced bananas

Preparation:

Mix the pudding and milk; add condensed milk. Mix  well; fold in half the whipped topping.  Alternate layers of pudding, vanilla wafers, banana; top with
remaining a few banana slices and remaining whipped topping. Refrigerate overnight before serving.
